Beat the Chills... Lemon Pepper Chicken

Monsoons are here and this year has been a rather crazy one with the deadly Corona Virus taking a mickey out of us all...
Staying safe and eating right is essential at this point and on this cold rainy day, I've got a recipe which will warm you up (literally)....

Here is how this tasty dish will help you combat your cold...

Key ingredients here -

Lemon :  High in Vitamin C and antioxidants, boosts immunity
Pepper :   Another great source of Vitamin C and antibiotic properties, plus it's a great decongestant.
Ginger :  Reduces inflammation caused in sore throats
Chicken broth: Contains vitamins A and C, magnesium, phosphorus, gelatin and antioxidants, which are known to build a strong immune system and fight off viruses. The protein from the chicken provides amino acids that are used to build antibodies to fight infection.

What goes in...
  • 1 Kg Chicken (Cut into Medium Sized Pieces)
  • 1 Teaspoon Turmeric Powder
  • 1 Table Spoon Salt
  • 2 Medium Onions ( Sliced Thin)
  • 1 Cup of Curry Leaves
  • 3 inches of Sliced Ginger
  • 3 Tablespoons of Pepper Powder
  • Juice of  2 Lemons
  • 1 Green Chilli
  • 4 Table spoons of Coconut Oil OR Sunflower Oil
Optional
  • 2 Tablespoons of Barbeque Sauce
  • 1 cup Thick Coconut Milk

And this is how we do it....... 😃

  STEP 1 :
Marinate the Chicken with 1 Table spoon Salt and 1 Heaped Tea Spoon of Turmeric Powder, set aside for around half hour.
 STEP 2 :
Heat all the oil in a wok, and add the sliced Onions.

   STEP 3 :
Fry until slightly brown and then add the sliced ginger and curry leaves.
STEP 4 :
Add all the pepper powder and green chopped chillies.
Give it a good mix and stir.

STEP 5 :
Stir around for a minute, and now add the Chicken.
Cover and cook on a low flame for 15 minutes  stirring in occasionally. The chicken will gradually let out water so there is no need to add any additional water.

STEP 6 : Add the lemon juice now.

Optionally you can add 2 tables spoons of Barbecue sauce and a cup of coconut milk and stir in gently.
I love to use this to enhance and lift the flavor as well as helps in adding a little thickness to the broth. Boil gently for another 10 minutes, serve on a dish and garnish with curry leaves.

This goes great with Steamed Rice.... Dig In!

Do try and let me know how it went in the comments .....

Au Revoir.. Until we meet again...
